Nothing much of a day

Had quite a nice sleep after my night shift. Daughter No3 took the dog out for his walk this afternoon so I didn't have to get up and take him out. Daughter No2 was busy at the hairdressers she works at usually at weekends. Wanted to prune some trees in the front garden today but I never seem to have much energy after a night shift so shall tackle them tomorrow. Had an evening tea of Fragrant pork rice one pot. This is a very frugal meal needing only a few main ingredient, sausages, rice, tin tomatoes and half an onion. Was a request from Daughter No 2 this week. Nothing much happened today. It's been a quiet day and I hope to have a more productive day tomorrow. To tell you the truth, a none productive day is quite a lovely day and a rare day here!

Must just finish on a high. So pleased with my views on my blog each day, I'm up to about 150 a day which is a big increase on my blog. Thanks to all who view. Much appreciated.

Menu Week 13/06/11




MONDAY - Starter-Wensleydale mushrooms. Omelet, jacket potatoes & beans
ME - No starter. Same meal

TUESDAY -Meatballs and spaghetti with homemade garlic bread
ME -Tuna tomato sauce & spaghetti

WEDNESDAY - Salmon en croute, New potatoes, peas & carrots
ME - Same

THURSDAY - Sausage, mash, vegetables and onion gravy
 ME - Veggies sausages, boiled potatoes, vegetables and onion gravy

FRIDAY - Leftover chicken & bacon in a sauce over vegetable rice
ME - Lentil & vegetable curry with rice

SATURDAY - Chicken curry and rice with naan bread
ME - lentil & vegetable curry and rice

SUNDAY - Roast Dinner

 Today I made a large bowl of pasta salad to have for my lunches through the week and for anyone else who fancies some.
I boiled some pasta and added half a packet of green beans. When cooked I added a drained tin of tuna, olives, cherry tomatoes, red onion and some peppers and marrow I roasted earlier. This was all combined with some dried oregano and a good drizzle of fat free dressing and then finished with quartered boiled eggs. It was a nice change from sandwiches for my lunch. The cost was £2.38 for the whole bowl full so I think that's very cheap because I will get about 5-6 servings from this bowl full.   


I used up some more leftovers from the freezer today to make a starter my lot love, Wensleydale mushrooms.



To make these I used some bacon bits I had already in the freezer and I used the Wensleydale cheese that was leftover from the party at the beginning of May. Shroves Tuesday





Have you had pancakes today? I made a big pile of pancakes yesterday because I am too busy today doing my voluntary job. All I needed to do today was make a filling and reheat. First we had stuffed pancakes. I made a filling by sauteing onion and garlic until soft then add spinach until wilted. To this I added a tub of ricotta cheese,  grated parmesan cheese and some cooked bacon bits. I placed a spoonful onto each pancake and folded into a triangle. These were placed into an ovenproof dish and topped with grated cheese. I covered with foil and placed in oven for 25 minutes. These were served with a tomato sauce I made and a salad.


For dessert we had pancakes with lemon and sugar. Daughter No2 had chocolate spread on hers.

Spring is a coming

Had a mooch around the garden when I  got back from my walk with the dog. I wanted to see what was growing and I wanted to pick some rosemary for dinner tonight. I checked on my rhubarb and saw a little pink shoot popping out of the mud.



The apple tree has buds growing and the strawberry plants seem to be okay after the harsh winter. Bulbs are growing nicely, just need to make time to get out and tidy the garden now. I did manage to fill my garden recycle bin yesterday tidying round the front garden so will try and do some work in the garden again next Monday.

I wanted the rosemary to make   Lemon & Rosemary Pork Steaks with crushed carrots & garlic new potatoes.
I marinated the pork steaks in lemon juice, olive oil, rosemary and freshly grated black pepper. I marinated a portion of tofu in this marinate for myself.


 I marinated these for an hour then pan fried on both sides to give them some colour.


I place these on a tray with a slice of apple, cover with foil and bake in a low oven for about 50 minutes to 1 hour. I did them on fan oven 140.
